Here are some super simple recipes for the Crock Pot that I enjoy cooking for our family. ( I realize that most of them are chicken, sorry if you're not a big poultry fan.)
Easy Asian Chicken
2 pounds chicken breasts, cubed
1 medium bottle teriyaki sauce
1 can water chestnuts
½ pound snow peas
Cut chicken breasts into bite size pieces. Put in crock pot and cover with teriyaki sauce. Cook on low for four hours. Add water chestnuts and snow peas and cook one more hour. Serve hot over rice.
To-Die-For Pot Roast
3 pounds beef roast
1 package Hidden Valley Ranch Dressing
1 package brown gravy mix
1 package Italian Dressing mix
½- ¾ cup water
Place beef roast in crock pot. Combine 3 mixes well and sprinkle over roast in pot. Pour water into bottom of crock pot. Cook on low for 6-7 hours. A wonderful sauces is created and perfect to serve over mashed potatoes alongside roast.
4 chicken breasts
1 can cranberry sauce
1 chopped onion
Combine ingredients into crock pot on LOW for 8 to 10 hours or on HIGH 4 to 6 hours. Tastes great served over rice!
1 8oz. bottle Russian dressing
1 8oz jar apricot preserves
1 pkg Lipton onion soup mix (dry; do not make soup)
Mix all ingredients in crock pot. Place frozen chicken (any amount) in crock pot, spread mixture over the chicken. Cook on LOW for 8 hours or HIGH 4 hours.
Crock Pot Italian Chicken
1 block cream cheese
1 can cream of chicken soup
1 pkg Italian Dressing
2 or 3 chicken breasts (thawed or frozen)
Melt together and stir, then place in chicken. Cook in crock pot for about 4 hours or until chicken falls apart. Serve over white rice.
Crock Pot BBQ Chicken
3 chicken breasts
1 bottle BBQ sauce
½ cup vinegar
½ cup brown sugar
1 tsp. mesquite seasoning
½ tsp. garlic powder
½ tsp. red pepper flakes
Place chicken in pot. Mix the other ingredients and pour on top of chicken. Cook in crock pot on LOW for 5 hours plus.
Slow Cooker Taco Soup
1 lb ground beef
1 onion, chopped
1 can chili beans, with liquid
1 can kidney beans with liquid
1 can whole kernel corn, with liquid
1 8 oz can tomato sauce
2 cups water
2 cans peeled and diced tomatoes
1 can diced green chile peppers
1 package taco seasoning mix
In a medium skillet, cook the ground beef until browned over medium heat. Drain, and set aside.
Place the ground beef, onion, chili beans, kidney beans, corn, tomato sauce, water, diced tomatoes, green chile peppers and taco seasoning mix in a slow cooker. Mix to blend, and cook on LOW setting for 8 hours.
( This is super easy- if you don’t have taco seasoning, you can use about 2 Tbsp chili powder, 1 Tbsp cumin, 1 Tbsp oregano, garlic, paprika, and salt to taste)
Crock Pot Salsa Chicken (super easy burrito meat)
About 1-2 lbs of chicken (can use frozen chicken tenders, or breasts)
Your favorite salsa
Spray crock pot with nonstick spray. Layer chicken in. Top with your favorite salsa ( a jar or two of whatever is on sale!)
Cook on high for 4-5 hours for tenders, maybe more for breasts. You could cook on LOW for probably 7-8 hours if you’re going to be gone all day. Shred with forks and serve how you like.
