Tamale Pie Recipe



Here is the Tamale Pies Recipe from a few days ago....
This one is for you Buffy!

START TO FINISH 30 minutes


1 lb. ground beef
1 lb. tomatoes, chopped
1/2 cup pitted olives, coarsely chopped
1/2 tsp. each salt and ground black pepper
1 8 1/2 oz. pkg. corn muffin mix
1/2 cup shredded cheddar cheese 
          Pitted olives, coarsely chopped tomatoes, and cilantro leaves (optional)

1. Preheat oven to 425' F. In 12-inch skillet cook beef until browned. Drain off fat. Add chopped tomatoes, olives, 1/4 cup water, salt, and pepper. Cook, stirring occasionally, until heated through.
2. Prepare corn muffin mix according to package directions. Divide hot ground beef among four 12-to 16-oz. casserole dishes. Top with muffin mix; sprinkle with cheddar cheese.
3. Bake 15 to 17 minutes or until topping is lightly golden and cooked through. Top with olives, tomatoes, and cilantro. Makes 4 servings.
EACH SERVING 384 cal, 11 g fat, 75 mg chol, 1,574 mg sodium, 65 g carb, 10 g fiber, 14 g pro.
