It's the last day of August and so this morning we celebrated with peanut butter pancakes!
Here are the ingredients for our peanut butter pancakes.
brown rice flour, sorgum flour, tapioca flour, xanthan gum, baking powder, pure cane sugar, eggs, and almond milk.
No wheat, no dairy. As always.
Wait? Where is the peanut butter? Here it is! We slather the natural peanut butter (crushed up peanuts with a dash of salt) on top with some drops of raw honey. In Jeddie's terms: "mmmm Yumm! Deeewishus!"
Did you know that if honey isn't raw, it's as useful (or counterproductive) as processed white table sugar? Some people try to be healthy by sweetening things with honey instead of sugar. But if it's not raw honey, there is no benefit. Raw honey has anti-viral, anti-bacterial, and anti-fungal properties. That means it strengthens your immune system!!
